Ingredients
- 300g Woolwich Dairy Original Soft Fresh Goat Cheese log
- 1 cup quinoa, cooked
- 3 ripe avocados, sliced
- 6 beets, raw, peeled and thinly sliced
- 2 cups edamame, frozen shelled, cooked to package instructions
- 2 cups cucumber, cut into chunky pieces
- ½ lemon, juiced
- Handful of cilantro, chopped
- 1 small clove of garlic, finely grated
- Salt and pepper to taste
Directions
- In a medium bowl, combine 1 avocado and lemon juice. Mash avocado until smooth, then add ¼ of the Woolwich Dairy Original Soft Fresh Goat Cheese log (about 75g) and garlic. Mix until incorporated well. Add salt and pepper, to taste.
- Slice the remaining goat cheese into ½” rounds. Set aside.
- Assemble buddah bowls by evenly dividing quinoa, remaining 2 sliced avocados, sliced beets, edamame, cucumber chunks and goat cheese rounds into 4 bowls.
- Drizzle the avocado-goat cheese sauce over the buddah bowl. Serve immediately.
