Ingredients
- 4 tortillas (9 in.)
- 2 (113 g) Woolwich Dairy lemon and lime goat cheese logs
- 2 cooked chicken breasts (preferably grilled), cut into strips
- 2 avocados, sliced
- A pinch of Mexican chili powder (optional)
- Approximately 60 ml (1/4 cup) fresh mint leaves
- Canola oil, as needed
Directions
- On a clean work surface, coat the 4 tortillas with Woolwich Dairy lemon and lime goat cheese. Garnish the tortillas with the chicken and avocado slices.
- Sprinkle some chili powder over top and garnish with a few mint leaves, then fold the tortillas shut.
- In a pan set over medium-low heat, cook the quesadillas, two at a time in a drizzle of canola oil, 2 to 3 minutes each side. Serve.
