Lavender Blackberry Lagoon

Ingredients

  • Woolwich Dairy Original Soft Fresh Goat Cheese log
  • Blackberries
  • Lavender
  • Sugar
  • Apricots (optional)

Directions

  1. Take Woolwich Dairy Original Soft Fresh Goat Cheese out of the fridge, remove it from its packaging and allow it to temper. This will ensure our signature recipe goat cheese is ultra-soft and smooth when it’s time to plate!
  2. Meanwhile, puree half of your blackberries in a blender, adding a splash of water and sprinkle of sugar. Blend until the blackberry mixture is a smooth liquid. Set aside.
  3. Using a silicone spatula (or spoon) scoop softened goat cheese onto a serving plate. Smear the cheese across the plate, creating a divot in the middle of the base for your blackberry puree. Spoon blackberry puree onto the goat cheese. Top with remaining blackberries and lavender for garnish. As an optional garnish, add additional fruit for contrast, like sweet apricots.
