- 113g Woolwich Dairy Original Soft Fresh Goat Cheese log
- 4 cups microgreens
- 6 beets, raw, peeled and thinly sliced
- 6 figs, quartered
- 1 pomegranate, seeds removed
- edible flowers
Pommies Cider Vinaigrette
- 2 tbsp Pommies Dry Cider
- 2 tbsp apple cider vinegar
- 6 tbsp extra virgin olive oil
- Salt and pepper, to taste
Directions
- Assemble microgreens evenly into 4 separate bowls. Evenly distribute beets and figs.
- Hand crumble Woolwich Dairy Original Soft Fresh Goat Cheese log on top. Sprinkle with pomegranate seeds and edible flowers.
- For the vinaigrette, pour the Pommies Dry Cider and vinegar into a small bowl. Add the salt and black pepper, to taste. Stir until the salt dissolves then add olive oil. Serve on top of microgreens salad.
