Fig & Feta Skewers

Ingredients

  • 600g Woolwich Dairy Goat Feta Cheese in Brine
  • 5 slices Prosciutto
  • 5 figs, quartered
  • 20 Blackberries
  • 1 bunch arugula
  • Bamboo or wood skewers
  • Balsamic drizzle (optional)

Directions

  1. Remove Woolwich Dairy Goat Feta Cheese from container filled with brine, and pat dry. Cut feta cheese into 1” cubes. The 600g container will yield about 32 cubes of cheese. Set aside.
  2. Slice prosciutto into 1” wide by 4” long strips. Each slice should yield 4 strips. Set aside.
  3. Quarter figs lengthwise, set aside.
  4. Start assembling your skewers! Alternate feta cubes, rolled prosciutto strips, quartered figs, blackberries and arugula, ensuring each skewer gets 3 cubes of cheese and 2 servings of every other ingredient.
  5. Serve skewers on their own or with a balsamic drizzle.
