Ingredients
- 2 tbsp Woolwich Dairy Original Soft Fresh Goat Cheese
- 2 tbsp Woolwich Dairy Original Soft Fresh Goat Cheese Crumbles, to garnish
- ¼ cup olive oil 1 tbsp white balsamic vinegar
- 1 tsp Dijon mustard 1 clove garlic, minced
- 1/2 tsp sea salt Ground black pepper
- 1 English cucumber, cut lengthwise into fine strips
- 1/2 cup flat-leaf parsley
- 1/2 cup fresh tarragon
- ¼ cup fresh dill
- 1/2 cup purple basil
- 1/2 cup fresh mint
- 1 green onion, minced
- 1/2 cup fresh blueberries
Directions
- Combine olive oil, white balsamic vinegar, Woolwich Dairy Original Soft Fresh Goat Cheese, Dijon mustard, garlic, salt and ground black pepper in a blender. Blend until fully combined. Refrigerate until ready to use.
- In a large bowl, add cucumber strips, parsley, tarragon, dill, purple basil, mint, green onion and blueberries. Pour vinaigrette over salad and toss delicately. Season with salt and pepper to taste.
- Transfer onto a serving dish. Garnish with Woolwich Dairy Original Soft Fresh Goat Cheese Crumbles. Serve immediately.
