Ingredients
- 55 g (1/2 log) Woolwich Dairy Original Soft Fresh Goat Cheese, room temperature
- ½ green zucchini, finely sliced lengthwise
- 1 tsp. olive oil
- Salt and ground pepper
- 1 tsp. butter, room temperature
- 1 ripe fig, torn into 3 pieces
- 1 tsp. honey
- 1 basil leaf, coarsely torn into pieces
- 2 slices sesame seed bread
- ¼ dehydrated roasted red bell pepper
Directions
- Preheat BBQ or grill pan on high.
- Baste zucchini slices with olive oil and season with salt and pepper. Grill for one minute on each side. Set aside.
- Set heat to low.
- In a small bowl, combine fig pieces, honey and basil.
- Butter each slice of bread. Spread Woolwich Dairy Original Soft Fresh Goat Cheese evenly, and add pepper slice, 3 fig pieces and grilled zucchini slices. Top with the second slice of bread, and place on hot grill.
- Cook 2 to 3 minutes on each side using a weight as needed to press down on the grilled cheese as it cooks.
