Ingredients
- ¾ cup Woolwich Dairy Soft Fresh Goat Cheese Crumbles
- ¾ cup Saputo Ricotta cheese
- 1 mound premade pizza dough
- 2 tbsp olive oil
- 1 cup fresh figs
- 2 slices Prosciutto
- ½ cup arugula
- 2 tbsp honey
Caramelized Onions
- 1 large yellow or red onion, sliced
- ½ tbsp olive oil
- ½ tbsp butter
- 1 tsp brown sugar
- 1 tsp balsamic vinegar
- Pinch of salt
Directions
- Start with preparing the Caramelized Onions. Slice the onion into ¼” slices. Meanwhile, heat butter and olive oil in a frying pan over medium-low heat.
- Once the pan is hot and butter is melted, stir in onion slices and salt. Cook down, stirring occasionally to avoid sticking, for about 10-15 minutes.
- Stir in brown sugar and balsamic vinegar. Cook for another 5-10 minutes, until onions are caramelized and sticky. Set aside.
- Preheat oven to 450°F.
- While the oven heats, slice the figs into rounds, and cut Prosciutto into bite-sized strips. Hand-tear the arugula into bite sized pieces. Set aside.
- With a rolling pin, roll out a tennis ball sized mound of pizza dough, until ¼” thick and shaped into a circle. Place on a baking sheet, coated evenly with olive oil.
- Top with ricotta, spread evenly across the dough.
- Distribute caramelized onions, figs and prosciutto evenly on the pizza.
- Finish with a generous sprinkle of Woolwich Dairy Soft Fresh Goat Cheese Crumbles and bake for 10-15 minutes until the crust is perfectly golden brown.
- Sprinkle with arugula, drizzle with honey and serve.
