Ingredients
- Woolwich Dairy Original Soft Fresh Goat Cheese log
- Carrots, julienned
- Zucchini, sliced lengthwise
- Olive oil
- Red chili peppers, dried, to taste
- Salt and pepper, to taste
Directions
- Take Woolwich Dairy Original Soft Fresh Goat Cheese out of the fridge, remove it from its packaging and allow it to temper. This will ensure our signature recipe goat cheese is smooth and spreadable!
- Julienne carrots, set aside. Slice zucchini lengthwise using a sharp knife or mandolin. Brush each slide of the zucchini slices with olive oil and sprinkle with salt and pepper. Grill over medium heat for 1-2 minutes per side. Cool in the refrigerator for 10 minutes.
- Once zucchini slices have cooled, spread the inside of each slice with tempered goat cheese. Layer in julienned carrots across half of each zucchini strip.
- To roll your goat cheese “maki”, start with the end with carrots, and roll into a pinwheel. Secure each with toothpicks, sprinkle with dried red chili peppers and serve.
