113g Woolwich Dairy CHEVRAI Original Goat Cheese log

4 cups microgreens

6 beets, raw, peeled and thinly sliced

6 figs, quartered

1 pomegranate, seeds removed

Pommies Cider Vinaigrette

2 tbsp Pommies Dry Cider

2 tbsp apple cider vinegar

6 tbsp extra virgin olive oil

Salt and pepper, to taste

  1. Assemble microgreens evenly into 4 separate bowls. Evenly distribute beets and figs.
  2. Hand crumble Woolwich Dairy CHEVRAI Original Goat Cheese log on top. Sprinkle with pomegranate seeds.
  3. For the vinaigrette, pour the Pommies Dry Cider and vinegar into a small bowl. Add the salt and black pepper, to taste. Stir until the salt dissolves then add olive oil. Serve on top of microgreens salad.
